Vegan Thai “Pizza”

  This dish began as a Green Curry Thai Pizza recipe I found in a Forks Over Knives magazine. What follows is the end result after I tweaked and altered their recipe a bit. Delicious Brussels Sprouts

The most delicious brussels sprouts I've ever had, and easy to make! Ingredients Cooking spray or Olive Oil 2 pounds uncooked Brussels Sprouts 2 Tbsp extra virgin olive oil 2 1 /2 tsp kosher salt, divided 1/4 tsp black pepper 4 Tbsp balsamic vinegar 2 Tbsp maple syrup   Instructions Preheat oven to 450 Coat large baking pan with cooking spray or olive oil Clean and trim sprouts, cut each in half.   I love Indian food. More specifically, I love Chicken Tikka Masala. But I no longer eat chicken. That's ok. It's that sauce that's so special. Black Bean Sweet Potato Enchiladas

This recipe grew out of one I found at Cookie and Kate's.  I started with their basic recipe and tweaked it along the way. I'll give you the recipe including the part where you roll the filling into the corn tortillas. But there's a lower-carb alternative that we've been enjoying too.   This yummy cheese sauce is what grew out of a recipe I found online for vegan “Mac & Cheese”. Of course it contains neither mac nor cheese.
