Vegan Thai “Pizza”

This dish began as a Green Curry Thai Pizza recipe I found in a Forks Over Knives magazine. What follows is the end result after I tweaked and altered their recipe a bit. Ingredients Whole Wheat Tortillas (1 per person) 1/2 cup hummus (see my recipe for the best hummus ever!) 1/4 cup peas (if frozen, thawed) 1 cups chopped, steamed broccoli 1 cup chopped, steamed sweet potato 1/2 cup sliced red bell pepper 1/2 cup shredded carrot 2 tsp of chili paste or some other spicy ingredient to your taste Juice of 1 lime or lemon salt, pepper, [...]

The Best Hummus Ever

I love hummus, but I never knew how easy it is to make, or that my homemade hummus would be better than any I ever bought from a store. I found this recipe from Cookie & Kate, who have some wonderful other vegan recipes you can peruse and try out. I usually tweak the recipes to make them easier or to suit my tastes, but this one is almost exactly as they wrote it. They describe it as the Best Hummus, and I agree. However, I've noticed that the brand of Tahini you use is very important. Some have [...]

Vegan Tikka Masala Sauce

I love Indian food. More specifically, I love Chicken Tikka Masala. But I no longer eat chicken. That's ok. It's that sauce that's so special. I tried out a few recipes before I gave up the bird, but none came close to the food that I often crave from our amazing local restaurant Arun's Indian Kitchen. (If you're ever in Coral Springs, FL, you must check them out.) So in my new quarantine-inspired vegan adventure, I came across two recipes for my Indian food of choice. Unfortunately, I didn't save the source for the original recipe I found for [...]

Black Bean Sweet Potato Enchiladas

This recipe grew out of one I found at Cookie and Kate's.  I started with their basic recipe and tweaked it along the way. I'll give you the recipe including the part where you roll the filling into the corn tortillas. But there's a lower-carb alternative that we've been enjoying too. Make the filling mixture, put it in a casserole dish and bake it as you would the rolled enchiladas. As much as I'm loving this delicious but healthy vegan eating, I'm trying to limit my carb intake. I'd like to lose some weight along with the cholesterol that's been [...]

Nicole’s Yummy Cheese

This yummy cheese sauce is what grew out of a recipe I found online for vegan “Mac & Cheese”. Of course it contains neither mac nor cheese. But I was at the start of my vegan journey and craving comfort foods. Although the finished meal of Not-Mac & Cheese was edible, it wasn’t delicious. That was due to the cauliflower that, in this case, was the substitute for said macaroni. Cauliflower, however, is a crucial ingredient for the amazing sauce which, as previously noted, is not cheese. But it is yummy, thus its new moniker. This recipe is for [...]
