This dish began as a Green Curry Thai Pizza recipe I found in a Forks Over Knives magazine. What follows is the end result after I tweaked and altered their recipe a bit.

Ingredients

Whole Wheat Tortillas (1 per person)

1/2 cup hummus (see my recipe for the best hummus ever!)

1/4 cup peas (if frozen, thawed)

1 cups chopped, steamed broccoli

1 cup chopped, steamed sweet potato

1/2 cup sliced red bell pepper

1/2 cup shredded carrot

2 tsp of chili paste or some other spicy ingredient to your taste

Juice of 1 lime or lemon

salt, pepper, garlic or garlic powder

 

  1. Preheat oven to 425.
  2. Heat skillet over medium heat. Put each tortilla in skillet so it’s toasted and crispy
  3. In a food processor, combine hummus, peas, chili paste, juice of 1/2 lime or lemon until creamy
  4. Spread humus mixture over the tortillas
  5. Top with broccoli, sweet potato, bell pepper and carrots
  6. Bake at 425 10-13 minutes
  7. Enjoy!
